that curious looking green fellow is a special addition we picked up at the farmers market… the chayote or choko, which i didn’t know existed until this morning but am now an expert on thanks to Google, is technically a fruit. it comes from Mexico (should fit right in with our bean & beer chilli!) and belongs to the gourd family Cucurbitaceae. also known as a mirliton squash.
it’s rich in nutrients, high in fibre and low in calories (low carb and zero fat!). it’s packed with antioxidants including heeeaps of vitamin C, B9 (folate) and potassium. they reckon it promotes heart health and supports liver function, as well as anti-ageing properties (though i’m sure in this case these benefits will be swiftly counteracted by the beer ).
i have no idea what it tastes like but apparently it’s similar in texture to a zucchini? it sounds versatile af, you can pretty much cook it any way you want, and you can eat it raw, including the skin. anyway, thanks nature for providing everything human beings need to survive and thrive without harming sentient beings. this chayote cost $2.
